The visitors were on top for large spells of a fascinating encounter on Merseyside, but fell behind on the half-hour mark as former Real Madrid midfielder James Rodríguez hit a stunner from distance.
Unperturbed by falling behind, the Foxes remained resolute and, in the second period in particular, they proceeded to bombard the Toffees' defence with waves of attacks in pursuit of a leveller.
Youri Tielemans' 67th-minute effort, from the edge of the penalty area, was enough to secure a point for City as both sides missed opportunities to seal all three in the latter moments.
Reflecting on Leicester's 20th Premier League outing of the 2020/21 season - which leaves them third in the standings - Pérez admitted that City were frustrated with only a solitary point.
"We’re unlucky not to get the three points," he told LCFC TV. "I think we did well enough to get them, but obviously, the feeling is [that] we played our game.
"[It was] a really good game, but we’re unlucky not to get the three points. [We were] a bit unlucky, to be honest. We approached their goal many times.
"But I think we were a bit unlucky not to get another a goal, also a lot of set-pieces. It wasn’t enough, but sometimes we score many goals from nothing.
"Tonight, we couldn’t, but I think we did well enough to get a point, that’s the positive. Now we’re thinking about the next one."
On the nature of the performance at a rain-lashed Goodison Park, Pérez outlined why the Foxes' never-say-die attitude can stand them in good stead over the coming months.
"That means a lot," the Spaniard added, commenting on a nine-game unbeaten run. "That means the mentality’s improving, it’s growing, for ourselves as a big team, a quality team.
"That’s why we’re up there, fighting with the best teams in the league and we’re proving it in every game we play.
"Obviously, that’s going to be very important, if we keep that momentum and that run up. That’s going to take us into a good place, from now to the end of the season.
"We’re working on that, we’re really focused on the work we are doing and making sure we keep getting points, and in the end, we’ll see what happens."
For the second matchday in a row, the former Newcastle United forward started in the central striker position for the Foxes - and he admits it's a role he's enjoying.
"I am feeling well in that role through the middle," Pérez continued. "I am feeling very comfortable. I know the chances are going to come and the goals as well.
"I’m trying to help the team on and off the ball and obviously, as a striker, you need to score goals, but I am sure they will come soon."
